Pecan-Crusted Chicken

Ingredients:

4 boneless, skinless chicken breasts

1 cup fresh pecans, finely chopped

1/2 cup panko breadcrumbs

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon garlic powder

2 large eggs

2 tablespoons olive oil

Instructions:

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a shallow dish, combine chopped pecans, panko, salt, pepper, paprika, and garlic powder.

3. Beat eggs in a separate shallow dish.

4. Dip each chicken breast in eggs, then press into the pecan mixture until fully coated.

5. Heat olive oil in a skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden.

6. Transfer chicken to the baking sheet and bake 15–20 minutes, until cooked through (internal temperature 165°F).

Tip: Serve with a honey mustard or maple glaze for an extra touch of sweetness that pairs perfectly with the pecans.
