Candied Pecans
Ingredients:
1/2 cup granulated sugar
1/2 c brown sugar
1 T ground cinnamon
1 tsp salt
1 tsp nutmeg
1/2 tsp clove
1/2 tsp ginger
1/4 tsp all spice
16 ounces (about 4 cups) halved pecans
1 large egg white
1/2 tsp vanilla
1 tsp water
Instructions:
1. Preheat oven to 300 degrees Fahrenheit. Line a large baking sheet with parchment paper.
2. Dry Coating: Add sugar, brown sugar, cinnamon, salt, nutmeg, clove, ginger, all spice into large bowl and combine.
3. Wet coating: In a mixing bowl whip egg whites, water, and vanilla until stuff peaks form
4. Fold pecans into the wet coating. Coat well.
5. Mix wet coated pecans into sugar and spice mixture
6. Spread pecans into a single layer on baking sheet. Bake for 40-45 minutes stirring every 15 minutes.
7. Remove from oven and allow pecans to cool completely on baking sheet
Tip: Store candied pecans in airtight container at room temperature or in the refrigerator for a few weeks
