Why Buy Fresh and Local?
Can I be really honest? I HATED when my grandma would put store bought pecans on the rice crispy treats. They tasted old and oily and had a weird texture. I grew up not liking pecans. To be fair I grew up on the prairies of Kansas where the only things we grew well were wheat and cows. So why did we buy a pecan orchard you may ask. Well, that's a question for another day.
Harvest of 2024 was my first experience with fresh pecans, and it completely changed my mind on pecans. Fresh pecans are tender and buttery. Their oils are fresh and beautiful. The flavor is deep and complex. This differs from store bought because most store pecans are at least a year old. They are dried with heat, and all those oils have gone rancid. If you think you dislike pecans, I dare you to try fresh.
So, if store bought pecans have rancid taste because they are so old and poorly stored, does this mean you can't have fresh pecans all year round? Absolutely not! However, the storage of your fresh pecans is important. If you leave your pecans on the counter they will last about 2 weeks. Putting them in an airtight container and placing them in your fridge keeps them fresh for up to 9 months. The best way to store these delectable delights is to place them in an airtight container and place them in the freezer. Freezing them can keep them fresh for up to two years (but they are so good you will eat them before then).
